200g of leftover peas (or broadbeans or sweetcorn)
good squeeze of lemon juice
salt and pepper
1-2 cloves of garlic
generous handfull of grated parmesan or goats cheese
Pop peas, garlic, lemon juice and drizzle of oil into a blender and blendto form a thick paste. Season with salt and pepper and add in cheese.
Serve on toast with crispy bacon - yum!
